How to make pancakes

Here’s a simple, classic recipe to make fluffy pancakes from scratch. This will make about 8-10 pancakes, depending on size.

### Ingredients:

- 1 cup (120g) all-purpose flour

- 2 tablespoons sugar

- 2 teaspoons baking powder

- 1/4 teaspoon salt

- 1 cup (240ml) milk (any kind works)

- 1 large egg

- 2 tablespoons melted butter (or vegetable oil) + extra for cooking

- Optional: 1 teaspoon vanilla extract for extra flavor

### Steps:

1. **Mix Dry Ingredients**: In a large bowl, whisk together the flour, sugar, baking powder, and salt.

2. **Combine Wet Ingredients**: In a separate bowl, whisk the milk, egg, melted butter, and vanilla (if using) until smooth.

3. **Make the Batter**: Pour the wet ingredients into the dry ingredients. Stir gently with a whisk or spoon until just combined—don’t overmix! A few small lumps are fine.

4. **Heat the Pan**: Place a non-stick skillet or griddle over medium heat. Add a small pat of butter or a drizzle of oil and let it melt and coat the surface.

5. **Cook the Pancakes**: Pour about 1/4 cup of batter onto the hot pan for each pancake. Cook until bubbles form on the surface and the edges look set (about 2-3 minutes). Flip with a spatula and cook for another 1-2 minutes until golden brown.

6. **Serve**: Stack them up and top with your favorites—maple syrup, butter, fresh fruit, whipped cream, or whatever you like!

### Tips:

- If the batter feels too thick, add a splash more milk; if too thin, add a bit more flour.

- Keep cooked pancakes warm in an oven at 200°F (90°C) while you finish the batch.

- For fun, toss in blueberries, chocolate chips, or a sprinkle of cinnamon after pouring the batter into the pan.

Enjoy your pancakes! Let me know if you want a twist, like a vegan or gluten-free version. What’s your favorite topping?
